Pan Burritos

Do you like lasagna? Would you be interested in a Mexican-flavored version but made with tortillas instead of noodles? This recipe is for you. Easy to prepare and can be modified to fit any taste profile.

Pan Burrito Recipe:

  • 2 packages (1.5oz each) Enchilada mix
  • 3 cups water
  • 12oz tomato paste
  • 1 garlic clove – minced
  • 1/4 teaspoon pepper
  • 2 pounds ground beef
  • 9 tortillas (9″)
  • 4 cups shredded cheddar cheese
  • 16oz refried beans (warmed)

Preparation:

  • In saucepan, combine first six ingredients, simmer 15-20 minutes
  • Brown beef, drain, stir in one third of sauce
  • Spread 1/3 sauce in bottom of 13x9x2 pan. Place 3 tortillas over sauce. Spoon 1/2 of meat mixture over tortillas, sprinkle 1.5 cups of cheese.
  • Add 3 tortillas, spread refried beans and last of meat mixture. Add 1.5 cups of cheese.
  • Add 3 tortillas, spread refried beans and last of meat mixture. Add 1.5 cups of cheese.
  • Add 3 tortillas, top with remaining sauce and cheese.
  • Bake uncovered at 350 degrees for 35-40 minutes. Let stand 10 minutes when done.
