Do you like lasagna? Would you be interested in a Mexican-flavored version but made with tortillas instead of noodles? This recipe is for you. Easy to prepare and can be modified to fit any taste profile.
Pan Burrito Recipe:
- 2 packages (1.5oz each) Enchilada mix
- 3 cups water
- 12oz tomato paste
- 1 garlic clove – minced
- 1/4 teaspoon pepper
- 2 pounds ground beef
- 9 tortillas (9″)
- 4 cups shredded cheddar cheese
- 16oz refried beans (warmed)
Preparation:
- In saucepan, combine first six ingredients, simmer 15-20 minutes
- Brown beef, drain, stir in one third of sauce
- Spread 1/3 sauce in bottom of 13x9x2 pan. Place 3 tortillas over sauce. Spoon 1/2 of meat mixture over tortillas, sprinkle 1.5 cups of cheese.
- Add 3 tortillas, spread refried beans and last of meat mixture. Add 1.5 cups of cheese.
- Add 3 tortillas, spread refried beans and last of meat mixture. Add 1.5 cups of cheese.
- Add 3 tortillas, top with remaining sauce and cheese.
- Bake uncovered at 350 degrees for 35-40 minutes. Let stand 10 minutes when done.
